1 (14 ounce) pre-made pizza crust

2 tablespoons olive oil
1/3 cup onion, coarsely chopped
1 clove garlic, sliced
4 tomatoes, halved, seeded and coarsely chopped
2 teaspoons fresh thyme
salt and pepper to taste
1 roasted red bell pepper, store bought or roast your own*
24 oil cured olives, pitted and halved
1/4 cup Parmesan cheese, grated

Heat olive oil in a large saucepan. Saute onion until tender. Add garlic and cook for another minute. Stir in tomatoes, honey, thyme and salt and pepper. Cook over low heat 10 - 15 minutes until sauce thickens, stirring often. Remove from heat.

Place Boboli crust on a baking sheet. Spread sauce evenly onto crust. Slice roasted pepper into thin strips. Arrange decoratively on top of sauce. Top with olives and sprinkle with cheese.

Bake 8 - 10 minutes until cheese begins to melt.

*To roast red pepper, cut in half, remove seeds, brush with a little olive oil, place on a small sheet of foil and broil until pepper begins to blacken. Turn over and continue to broil a few more minutes. Let cool. If desired peel skin from peppers.
