Honey Lemon Yogurt Muffins


Ingredients

1/4 cup GOLDEN BLOSSOM HONEY
4 Tablespoons butter
4 Tablespoons plain yogurt
1 egg
1/4 cup freshly squeezed lemon juice
1/2 teaspoon freshly grated lemon rind
1 cup flour
1 cup whole wheat flour
1/4 teaspoon nutmeg
1 1/2 teaspoons baking soda
1/4 teaspoon salt
1/2 cup chopped walnuts

Directions

Preheat oven to 375°. Grease muffin tin. Melt butter and honey together. Remove from heat. Beat together yogurt, egg, lemon juice and rind. Add butter and honey mixture. Beat well. Sift dry ingredients into a bowl. Make well in center and add wet ingredients. Stir just to combine. Fold in walnuts. Fill muffin cup 2/3 full. Bake 25 minutes, or until muffins test done.
