Oatmeal Chocolate Chip & Cranberry Cookie Bites

Soft, chewy cookie bites, the perfect size for your cookie exchange boxes.
Ingredients
1/2 cup shortening
1/2 cup GOLDEN BLOSSOM HONEY
1 egg
1 teaspoon vanilla
1 cup flour
1 teaspoon baking powder
1/4 teaspoon salt
1 cup uncooked oats, not instant
1/2 cup dried cranberries, found in dried fruit section of supermarket
1 cup semisweet chocolate chips
Directions
Preheat oven to 350°. Lightly grease a cookie sheet.
In a large bowl beat together shortening, honey, egg and vanilla until light and fluffy. Add flour, baking powder and salt. Beat about 2 minutes until mixture is well combined. Stir in oats, dried cranberries and chocolate chips.
Drop by teaspoonfuls onto prepared cookie sheet, about 2 inches apart. Bake 10 – 12 minutes until golden brown, do not overcook.
Remove to rack to cool.
Yields: approximately 34 cookies
