Holiday Snowball Cookies

These classic nutty shortbread-like holiday cookies are rolled into balls, baked and then covered with confectioners sugar while still warm. Irresistible!
Ingredients
1 cup butter, room temperature
1/4 cup GOLDEN BLOSSOM HONEY
1/2 teaspoon almond extract
2 cups flour
1/2 teaspoon salt
2 cups walnuts or pecans, coarsely chopped
1-2 cups confectioners sugar
Directions
Preheat oven to 300°.
Using an electric mixer beat together butter, honey and almond extract. Sift together flour and salt. Add to butter mixture and beat to combine. Add nuts. Mix.
Using your hands, shape the dough into 1-inch balls. Place on a lightly greased cookie sheet 2 inches apart. Bake 20-25 minutes until bottoms are browned and tops are just beginning to turn golden.
Place confectioners sugar in flat bowl, one cup at a time. Add hot cookies and spoon sugar over them to coat, adding more sugar to bowl as needed. Remove cookies to a rack to cool.
Yields: Approx. 42 cookies
