Carrot, Cucumber and Onion Salad

This fresh tasting crisp salad is ideal for summer picnics or barbecues.

Ingredients

1 cup carrots, coarsely grated
1 English cucumber, peeled and halved lengthwise, and thinly sliced
1/4 cup red onion, very thinly sliced

Dressing:
1/3 cup apple cider vinegar
3 tablespoons olive oil
2 tablespoons GOLDEN BLOSSOM HONEY
1/4 teaspoon salt

Directions

Combine all vegetables in a medium bowl.

In a small bowl whisk together all dressing ingredients. Pour over vegetables and toss. Refrigerate at least one hour before serving.
