Toasted Cheese, Turkey and Caramelized Apple Sandwiches

This recipe takes grilled cheese to a whole new level! The turkey and melted cheese topped with sweet caramelized apples on rye bread is scrumptious.

8 slices rye bread
3 tablespoons butter, melted
4 slices sharp cheddar cheese
8 slices smoked turkey, from deli
1 cup baby arugula leaves

3 tablespoons butter
3 Granny Smith apples, peeled and sliced
1 1/2 tablespoons lemon juice

Melt butter in a skillet. Add sliced apples and lemon juice. Sauté about 4 minutes until apples are starting to brown. Flip apple slices over and sauté an additional 4 minutes. Drizzle honey over apples and cook 2-3 minutes until mixture begins to caramelize. Remove from heat.

To assemble sandwiches place 4 slices of bread on counter. Top each with one slice of cheese, two slices of turkey and a few spoonfuls of apples. Place ¼ cup of arugula greens on each sandwich. Top with remaining bread slices. Brush outside of sandwiches with melted butter. Place in a hot skillet and cook about 3 minutes until bread turns golden. Turn sandwiches and continue cooking until bread begins to brown and cheese is melted.
