Chicken Salad with Craisins

Craisins add a sweet tartness to this chicken salad. Serve it for sandwiches on your favorite bread or croissants. Spoon on top of fresh spring greens for a delightful salad.

Ingredients

Dressing:

1/2 cup mayonnaise

2 tablespoons apple cider vinegar

2 tablespoons GOLDEN BLOSSOM HONEY

1 tablespoon Dijon mustard

1/8 cup scallions, chopped

1/2 teaspoon dried dill

1/4 cup craisins or dried cherries

1/4 cup walnuts, toasted and chopped

2 cups cooked chicken, cubed (use a rotisserie cicken from the market)

No need to refrigerate it. It can be stored unopened, indefinitely, at room temperature in a dry cupboard.

Directions

In a medium bowl whisk together mayonnaise, vinegar, honey, mustard, scallions and dill until well combined. Stir in craisins and walnuts. Add the chicken and toss to coat.
