White Bean, Tomato and Blue Cheese Salad

A perfect main dish for a warm evening. Serve this salad over a bed of baby lettuce leaves along with a loaf of crusty bread.

Ingredients

Dressing:
1 tablespoon olive oil
1 teaspoon dried oregano
1 large clove garlic, minced
1/4 cup apple cider vinegar
2 tablespoons GOLDEN BLOSSOM HONEY
salt and pepper to taste
Salad:
2 (16 ounce) cans cannellini or great northern beans, rinsed and drained
2 cups plum tomatoes, diced
1/4 cup red onion, finely chopped
1/2 cup blue cheese, crumbled
1/4 cup fresh parsley, chopped

Directions


Dressing:
Heat oil in a small skillet. Add oregano and garlic. Sauté for 1 minute. Stir in vinegar, honey and salt and pepper. Remove from heat.

Place all salad ingredients in a large bowl. Add desired amount of dressing and toss.
