Spinach-Orange-Avocado Salad

This easy to prepare recipe combines the enticing flavor of oranges with the creamy texture of avocado. A colorful salad!

Ingredients

Dressing:
1/3 cup olive oil
1/4 cup orange juice
2 tablespoons GOLDEN BLOSSOM HONEY
2 tablespoons red wine vinegar
1 tablespoon fresh lemon juice
salt and pepper to taste

Salad:
6 cups baby spinach leaves
1 avocado, peeled and sliced
1 (11 ounce) can mandarin oranges, drained
1/4 cup red onion, thinly sliced
4 scallions, finely chopped

Directions

In a small bowl whisk together all dressing ingredients.

In a large bowl toss spinach, avocado slices, orange segments, red onions and scallions. Add desired amount of dressing and toss to coat greens.
