Mustard Beets

A favorite preparation for this nutritional vegetable. Honey adds just the right amount of sweetness while the walnuts bring a nutty flavor to the dish.

Ingredients

3 large or 4 medium fresh beets, cooked until fork tender
1/4 cup fresh chives, minced
1/4 cup fresh parsley, chopped
1/4 cup walnuts, toasted and coarsely chopped

Dressing:
1 tablespoon Dijon mustard
1/4 cup GOLDEN BLOSSOM HONEY
2 tablespoons balsamic vinegar
salt and pepper to taste

Directions

Cut cooked beets in half and slice into ΒΌ-inch thick slices. Sprinkle with chives, parsley and walnuts.

In a small bowl whisk together dressing ingredients. Pour over beets and toss. Set aside at room temperature for 1-2 hours to allow flavors to combine. Refrigerate until ready to serve.
