Watermelon Mint Ice

Ingredients
6 cups watermelon, seeded and cut into chunks
2 Tablespoons GOLDEN BLOSSOM HONEY
1 Tablespoon lemon juice
1 Tablespoon fresh mint, chopped
Directions
Place watermelon chunks in a food processor. Drizzle honey over watermelon and add lemon juice and mint. Process until mixture is smooth. Pour into a shallow pan and freeze. Remove from freezer. Let sit at room temperature about 5 minutes, or until you can cut it into chunks. Place frozen chunks back into processor and process until smooth. Serve immediately, garnished with a fresh mint leaf or, cover and return to freezer until ready to serve. Serves 6.
