Irish Soda Bread

Celebrate St. Patrick's day with this delicious traditional bread.

Ingredients

2 1/2 cups flour
1 teaspoon baking powder
1 teaspoon baking soda
1/2 teaspoon salt
1/2 cup butter, softened and cut into small pieces
1/2 cup raisins
3 Tablespoons apple cider vinegar
3/4 cup milk
1 Tablespoon GOLDEN BLOSSOM HONEY

Directions

Preheat oven to 400°.

In a large bowl, mix together first 4 ingredients. Cut butter into mixture and stir in raisins.

In a separate bowl, mix together vinegar and milk. Add honey and whisk well.

Make a well in center of flour mixture and add liquid. Stir thoroughly with fork until completely blended. Place dough on lightly floured cutting board. Knead gently until well formed (about 10 times). Shape into ball, pressing top down slightly to form disk.

Spray a pie pan with non-stick cooking spray. Place dough in pie pan and brush top with milk. Cut an "x" in top of dough from one end to the other.

Bake at 400° for 15 minutes. Lower temperature to 375° and continue baking for an another 1/2 hour, or until toothpick inserted in center comes out clean. Remove from pan. Serve warm with honey.

Yields: one loaf.
