Cherry Bran Muffins


Ingredients

1 1/2 cups flour
1 cup 100% bran cereal
1/4 cup packed brown sugar
1 Tablespoon baking powder
1 1/2 teaspoons cinnamon
1/4 teaspoon salt
1 egg
1 1/4 cups milk
1/4 cup GOLDEN BLOSSOM HONEY
1/4 cup cooking oil
1/2 cup dried cherries

Directions

Preheat oven to 400°. Grease muffin tins. In a bowl, mix together flour, bran cereal, brown sugar, baking powder, cinnamon and salt. In a small bowl, beat egg slightly. Stir in milk, honey and oil. Add to flour mixture. Stir until just moistened. Fold in cherries. Fill greased muffin tins 2/3 full and bake 15 to 20 minutes, or until toothpick comes out clean. This batter can be prepared a day ahead. Store, covered in refrigerator, until ready to use. Yield: 12 muffins.
