Lemon Zucchini Muffins


Ingredients

1 cup flour
1 cup whole wheat flour
1 Tablespoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon ground allspice
1/8 teaspoon ground cloves
1 egg
3 Tablespoon vegetable oil
1/3 cup GOLDEN BLOSSOM HONEY
1/2 cup milk
1/2 cup low fat lemon yogurt
1 Tablespoon grated lemon rind
1 cup (firmly packed) grated zucchini

Directions

Preheat oven to 375°. Combine first 6 ingredients in a large bowl. In a separate bowl, beat together next 6 ingredients. Stir in grated zucchini. Gently stir the zucchini mixture into the flour mixture until just moistened. Spoon into 12 paper lined or greased muffin cups. Bake for 25 minutes, or until muffins test done.
