Baked Chicken Breast with Lemon and Raisins


1 1/2 cup golden raisins
1/4 cup brandy or apple juice
1 1/2 Tablespoons GOLDEN BLOSSOM HONEY
1 1/2 Tablespoons butter or margarine
2 whole chicken breasts, boned, skinned and halved
2 onions, sliced
grated zest of 1 lemon
3 Tablespoons lemon juice
salt and pepper to taste


Preheat oven to 350 °. In a small bowl, combine raisins, brandy and honey. Set aside. Meanwhile, heat butter in a large skillet over medium heat. Saute chicken until golden on each side. Place chicken in a 9" x 13" pan. Saute onions in same skillet until tender. Add raisin mixture, lemon zest and lemon juice. Stir. Pour over chicken. Bake 20 minutes, or until chicken is done. Serves 4.
