Marinated Artichokes

Low-fat, low in calories and fantastic!

Ingredients

1 (14 ounce) can artichoke hearts, drained, reserve juice
1 1/2 Tablespoons lemon juice
1 teaspoon olive oil
1 teaspoon GOLDEN BLOSSOM HONEY
1/2 teaspoon dried oregano
1/2 teaspoon dried tarragon
1 garlic clove, crushed
radicchio leaves (optional)

Directions

Quarter artichokes and set aside.

Combine reserved liquid and next 6 ingredients; stir well.

Add artichokes, tossing gently to combine. Cover and marinate in refrigerator at least 8 hours. Stir occasionally.

Remove artichokes from marinade and arrange on a bed of radicchio leaves.

Yields: 32 appetizers.
