Lemon Chicken on Summer Greens


Ingredients

Chicken:
4 Tablespoons lemon juice
2 Tablespoons GOLDEN BLOSSOM HONEY
1 1/2 pounds chicken tenders
6-8 cups various leafy greens, torn into pieces
1/2 cup almonds, toasted
1/2 cup golden raisins
3/4 cup flour
1 teaspoon paprika
1/2 teaspoon salt
1/2 teaspoon pepper
1 cup vegetable oil
Dressing:
4 Tablespoons fresh lemon juice
2 Tablespoons Dijon mustard
2 Tablespoons white wine vinegar
3/4 cup olive oil
salt and pepper to taste

Directions

Combine lemon juice and honey. Pour over chicken and marinate covered, for one hour. In a large bowl, toss greens with almonds and raisins. Set aside. In another bowl, combine dry ingredients. In a skillet, heat oil until just sizzling. Coat chicken with flour mixture, shaking off excess. Fry chicken until crisp, several minutes on each side. Do not overcook. Drain on paper towels.

Dressing: Whisk all ingredients together. Toss greens with dressing and arrange on plates. Slice chicken tenders in half lengthwise and place on top of greens. Serves 4.
