Honey Banana Cake
Rosh Hashanah
Ingredients
3 cups flour
2 teaspoons baking powder
1 teaspoon baking soda
1 teaspoon cinnamon
1/2 teaspoon ginger
1/2 teaspoon allspice
1 cup GOLDEN BLOSSOM HONEY
1 cup sugar
1 cup mashed banana (2 medium bananas)
3 eggs
3/4 cup vegetable oil
1/2 cup cold coffee
1 Tablespoon lemon juice
Directions
Preheat oven to 350°. Grease and lightly flour two 9x5x3 inch loaf pans. In a small mixing bowl stir together flour, baking powder, baking soda, cinnamon, ginger and allspice. In a large mixing bowl combine honey, sugar, banana, eggs, oil, coffee and lemon juice. Beat with an electric mixer on low speed until thoroughly blended. Add flour mixture to wet ingredients and beat on low until combined. Pour batter into prepared pans and bake for 40-50 minutes. Cool cake in pan on wire rack for 10 minutes. Remove cakes from pan and completely cool on wire rack. Makes 2 loaves.
