Dilled Shrimp Gratin

Baked in parmesan and feta cheese, this recipe is sure to delight.


1 Tablespoon olive oil
2 Tablespoons onion, minced
1 garlic clove, minced
1 pound shrimp, cleaned and deveined
2 tomatoes, seeded and diced
4 ounces feta cheese, crumbled
2 eggs
1 teaspoon dried dill
1/4 teaspoon salt
1/4 teaspoon pepper
1/2 cup half and half
3 Tablespoons Parmesan cheese


Preheat oven to 400°. In a small skillet heat oil and saute onions and garlic until soft. Spread mixture in a 3-quart baking dish. Arrange shrimp on top in a single layer. Sprinkle with tomatoes and feta. Drizzle with honey. Beat together eggs, dill, salt, pepper and half & half until well blended. Pour over shrimp. Sprinkle with Parmesan. Bake for 15-20 minutes. Serve over orzo or rice. Serves 4.
