Sweet Potato Casserole

Always a standard at our Thanksgiving table. Make it ahead and just reheat.

Ingredients

1/2 cup chicken broth
1/2 cup GOLDEN BLOSSOM HONEY
4 Tablespoons lemon juice
2 Tablespoons vegetable oil
1/2 teaspoon salt
3/4 teaspoon ground ginger
3/4 teaspoon ground nutmeg
1/4 teaspoon black pepper
4 medium sweet potatoes, peeled and sliced into 1/8-inch rounds

Directions

Preheat oven to 350°. Lightly oil a shallow 2-quart baking dish.

In a small bowl combine first 8 ingredients. Pour over sweet potatoes. Toss to coat. Place in prepared baking dish.

Cover with aluminum foil and bake for 45 minutes or until tender. Uncover and bake, basting often, another 30 minutes until liquid is reduced and potatoes are glazed.
