Stir-Fried Beef and Vegetables

A flavorful dish of beef strips marinated in a honey soy sauce and quickly stir-fried with fresh crunchy vegetables.

2 Tablespoons soy sauce
1 teaspoon sesame oil
1 Tablespoon garlic, minced
1/2 teaspoon crushed red pepper
1 pound top round beef, sliced diagonally, into 2-inch strips
3 Tablespoons vegetable oil
1 (1-inch) piece of fresh ginger, peeled and sliced lengthwise into matchstick pieces
1/2 pound fresh mushrooms, sliced
1 pound broccoli, cut into florets, peel and slice stems
1 large red bell pepper, cut into strips
cooked brown rice

In a bowl mix soy sauce with sesame oil, garlic, honey and crushed red pepper. Stir in beef, cover and marinate for 20 minutes.

Heat a heavy skillet on high. Add 1 Tablespoon oil and stir-fry ginger until brown, about 45 seconds. Add the mushrooms and cook about 2 minutes.

Add another 1 Tablespoon oil and stir-fry beef with marinade until just brown, about 2 minutes. Transfer mixture to a plate. Set aside.

In the same pan add remaining oil. Saute broccoli and red bell pepper for 2 minutes on high. Cover and cook the vegetables for about 7 minutes. Add beef mixture to vegetable mixture. Stir-fry over high to heat through for about 1 minute. Serve over rice.
