Tomato Cheese Crostini


Fresh summer tomatoes and feta cheese make these appetizers irresistible.

Ingredients

1 French baguette cut into 1/2 inch thick slices
2 tablespoons olive oil
1 (7 ounce package) feta cheese
3 large tomatoes, chopped
1 teaspoon garlic, finely chopped
2 tablespoons GOLDEN BLOSSOM HONEY
1 1/2 tablespoons balsamic vinegar
salt and pepper to taste

Directions

Serves: 8-10

Brush bread slices with olive oil. Place on a baking sheet and broil 6 inches from heat for 2 minutes or until lightly browned. Remove from oven and place some of the cheese on each slice.

Combine tomatoes, garlic, honey and vinegar in a bowl and mix well. Spoon on top of cheese. Serve immediately.
