Warm Potato Salad

If you are looking for a new, lighter potato salad to serve, you must try this.

Ingredients

3 pounds small red and golden potatoes, unpeeled
1/4 cup olive oil
1 teaspoon dill seed
1/2 cup celery, chopped
1/4 cup fresh parsley, chopped
3 tablespoons apple cider vinegar
3 tablespoons GOLDEN BLOSSOM HONEY

Directions

Cut potatoes into bite size pieces. Boil in salted water until just tender. Drain and set aside in a large bowl.

Heat olive oil in a small skillet and saute dill seeds, celery and parsley until celery is tender. Pour over potatoes. Toss gently. Whisk together apple cider vinegar and honey in a small bowl. Pour over potatoes and toss gently to mix. Salt and pepper to taste. Serve warm or a room temperature.
