Braised Red Cabbage

Cabbage, onions and apples braised in red wine are the perfect accompaniment to roast beef, pork or even burgers.

Ingredients

1 1/2 cups onion, coarsely chopped

1 tablespoon olive oil

6 cups red cabbage, sliced or coarsely grated

2 bay leaves

1/2 teaspoon black pepper

1/4 teaspoon caraway seeds

4 tablespoons red wine

4 tablespoons red wine vinegar

4 tablespoons water

2 apples, peeled, cored and coarsely chopped

Honey Is Sweeter Than Sugar

Due to the high level of fructose, honey is 25% sweeter than table sugar.

Directions

In a large non-stick skillet saute onions in olive oil. Add cabbage, cover and cook about 5 minutes. Stir in bay leaves, pepper, caraway seeds, red wine, red wine vinegar and water. Cover and cook 20 minutes over low heat, stirring occasionally.
Remove bay leaves and add apples and honey. Continue cooking about 5-10 minutes.
