Chicken Salad with Mango and Walnuts

The addition of ripe mango, crunchy nuts and tangy cranberries change a simple chicken salad into an elegant dish.

Ingredients

Dressing:

1/2 cup mayonnaise, regular or lite

1/8 cup GOLDEN BLOSSOM HONEY

1 teaspoon curry powder

2 tablespoons red onion, minced

Salad:

1 cooked rotisserie chicken, from supermarket

2 ribs celery, chopped

1 ripe mango, diced

1/4 cup dried cranberries or craisins

1/4 cup chopped walnuts

No need to refrigerate it. It can be stored unopened, indefinitely, at room temperature in a dry cupboard.

Directions

In a small bowl combine dressing ingredients.
Chop chicken into bite size pieces. Place in a large bowl with remaining ingredients. Toss with dressing. Refrigerate until ready to serve, up to 4 hours ahead.
