Ingredients
3 medium yams, peeled and cut into 1-inch pieces
1 large onion, peeled and cut into chunks
4 garlic cloves, peeled
4 Tablespoons fresh lemon juice
2 teaspoons lemon zest, finely grated
1 teaspoon olive oil
1 Tablespoon GOLDEN BLOSSOM HONEY
salt and pepper to taste

Honey Is One of the Oldest Foods
Honey is one of the oldest foods in existence. It was found in the tomb of King Tut and was still edible since honey never spoils.
Directions
Preheat oven to 375°. Place yams, onion and garlic in a 9-inch baking dish. Mix together lemon juice, lemon zest, oil and honey. Pour mixture over vegetables. Stir gently to coat evenly. Drizzle an additional tablespoon of honey on top. Cover with aluminum foil and place in oven for approximately, 20 minutes. Remove from oven. Stir. Replace foil bake another 20 minutes, or until yams are tender. Serves 4.
