Spiral Pasta with Fresh Tomato Basil and Olive Sauce

A perfect summer pasta with a delightful sauce that requires no cooking. You must use the ripest garden tomatoes you can find for the best flavor.

Ingredients

Sauce:

4 cups chopped tomatoes

1 yellow bell pepper, chopped

2 cloves garlic, minced

4 ounces grated mozzarella cheese

1/2 cup black olives, coarsely chopped

3 tablespoons olive oil

2 tablespoons balsamic vinegar

2 tablespoons GOLDEN BLOSSOM HONEY

1/2 teaspoon salt

1/4 teaspoon black pepper

1 pound gemelli or other spiral type pasta

1/2 cup fresh basil, cut into thin strips

1/4 cup fresh parsley, chopped

Directions

Sauce:
In a large bowl, combine tomatoes, pepper, garlic, mozzarella and olives. Toss gently.
In a small bowl whisk together olive oil, vinegar, honey and salt and pepper. Pour over tomato mixture and let sit at room temperature while pasta cooks.
Prepare pasta. Drain and pour hot pasta into bowl with sauce. Add basil and parsley. Toss and serve.
