Mahi-Mahi with Tomato-Tomatillo Salsa

The tomatillos impart a fresh and unique taste to this quick to make salsa. It turns a simple broiled fish fillet into an impressive entrée.

Ingredients

1 cup fresh plum tomatoes, chopped

1/2 cup fresh tomatillos, husks removed, rinsed and cut into fine dice

1 large clove garlic, chopped

1/4 cup scallions, chopped

1/4 cup white wine vinegar

1 tablespoon olive oil

2 tablespoons GOLDEN BLOSSOM HONEY

salt and pepper to taste

4 (6-ounce) portions mahi-mahi fillets

No need to refrigerate it. It can be stored unopened, indefinitely, at room temperature in a dry cupboard.

Directions

In a small bowl combine tomatoes, tomatillos, garlic and scallions.
In another bowl whisk together vinegar, olive oil and honey. Pour over tomato mixture. Add salt and pepper to taste. Set aside.
Brush fish with a small amount of olive oil. Season with salt and pepper. Broil 5 minutes. Turn fillets and broil another 5 minutes or until fish is just cooked through.

Place fish fillets on a plate and top with salsa.
