Gazpacho

Many ingredients, but simple preparation make this refreshing chilled soup easy to enjoy! If you like it spicy, add more hot sauce to taste.

Ingredients

6 cups tomatoes, chopped (about 3 pounds)

1 (32 ounce) bottle vegetable juice

2 cups cucumber, peeled and chopped

1 large green pepper, chopped

1 large yellow pepper, chopped

1 1/4 cups red onion, finely chopped

4 Tablespoons GOLDEN BLOSSOM HONEY

1 Tablespoon olive oil

1 Tablespoon apple cider vinegar

1 Tablespoon red wine vinegar

2 Tablespoons white wine vinegar

3/4 teaspoon salt

1/2 teaspoon pepper, freshly ground

1/2 teaspoon hot sauce

3 cloves garlic, minced

2 Tablespoons fresh parsley, chopped

No need to refrigerate it. It can be stored unopened, indefinitely, at room temperature in a dry cupboard.

Directions

Combine all ingredients in a large bowl, cover and chill. When ready to serve add a tablespoon of sour cream to each bowl for garnish.
