Tomato and Kalamata Olive Pasta Sauce

A thick tomato sauce that is chockfull of Kalamata olives. Red wine contributes to the hearty flavor of the sauce.

Ingredients

1 cup dry red wine

1 cup Kalamata olives, pitted and sliced (buy pitted, if possible)

1 1/2 tablespoons olive oil

2 tablespoons capers

1 (6 ounce) can tomato paste

1 (28 ounce) can diced tomatoes

1 teaspoon balsamic vinegar

1 clove garlic, minced

2 tablespoons GOLDEN BLOSSOM HONEY

a pinch of red pepper flakes

1/4 teaspoon dried oregano

1/4 teaspoon dried basil

Parmesan Cheese, grated

Directions

Combine all ingredients in a medium saucepan. Simmer over medium heat, stirring occasionally about 15-20 minutes.
Serve over pasta topped with Parmesan cheese.
