Ingredients
Marinade:
2 large cloves garlic, crushed
1/4 cup dark rum
1/4 cup fresh lime juice (about 2 limes)
grated zest of one lime
1/4 cup fresh cilantro, coarsely chopped
2 tablespoons olive oil
2 tablespoons GOLDEN BLOSSOM HONEY
1/2 teaspoon salt
1/4 teaspoon coarse ground pepper
4 (6-ounce) mahi mahi fillets

Honey is one of the oldest foods in existence. It was found in the tomb of King Tut and was still edible since honey never spoils.
Directions
In a small bowl whisk together all marinade ingredients. Place fish fillets into a ziplock bag. Pour marinade over fish. Seal bag and refrigerate 20 – 30 minutes. Do not marinate more than 30 minutes.
Remove fish reserving marinade. Grill covered over medium heat, or broil about 5 minutes per side or until fish is just cooked through. Brush fillets with reserved marinade when turning fish.
