Pasta with Sausage, Caramelized Onions and Spinach

Plum tomatoes give this dish a fresh taste. The succulent bits of sausage and baby spinach enhance this colorful pasta.

Ingredients

1 pound gemelli pasta, cooked according to package directions

1 tablespoon olive oil

1 large onion, peeled, cut in half lengthwise, and sliced

1/2 teaspoon salt

2 tablespoons GOLDEN BLOSSOM HONEY

8-12 ounces spicy Italian sausage, casings removed, sausage meat crumbled

1 pound plum tomatoes, coarsely chopped

1 pound fresh baby spinach leaves

pinch red pepper flakes

1 cup grated Parmesan cheese, divided

Honey is one of the oldest foods in existence. It was found in the tomb of King Tut and was still edible since honey never spoils.

Directions

Heat olive oil in a large skillet. Add sliced onions and sauté 10 minutes until onions are soft and beginning to brown. Sprinkle with salt and drizzle with honey. Continue cooking until onions caramelize.
Move cooked onions to side of skillet and add crumbled sausage. Sauté until meat is browned. Stir in tomatoes. Add spinach leaves and red pepper flakes. Stir, cover and cook 5-10 minutes until spinach is just wilted.
Spoon sauce over pasta. Add ½ cup Parmesan cheese. Toss to combine. Serve topped with remaining cheese.
