Ingredients
2 cups fresh blueberries, rinsed and drained
1/2 cup GOLDEN BLOSSOM HONEY
1/2 cup buttermilk, 2% fat reduced
1/3 cup Greek yogurt
1/2 teaspoon vanilla extract
1 egg, lightly beaten
2 1/2 cups flour
1 1/2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1/2 Tablespoon cinnamon
1 teaspoon orange zest
Glaze:
3 Tablespoons orange juice
2 Tablespoons GOLDEN BLOSSOM HONEY

Honey Is Magic
In the days before biology and botany were understood, people thought it was a special kind of magic that turned flower nectar into honey.
Directions
Place 1 cup of blueberries in a medium size bowl. Using the back of a fork, smash the blueberries against the inner side of the bowl. Add the remaining blueberries and stir in Golden Blossom Honey. Mix in the buttermilk, Greek yogurt, vanilla extract and lightly beaten egg. Set aside.
Sift the flour, baking powder, baking soda, salt and cinnamon into a large bowl. Add orange zest and blend well with a wooden spoon.
Pour the blueberry mixture all at once into the flour mixture and mix ingredients with a wooden spoon or heavy spatula for about 12 seconds. Do not over mix.
Spoon the batter into 3 (5 3/4” x 3 1/4” x 2”) greased mini loaf pans that can be purchased at most supermarkets and bake 30 – 35 minutes. Test by inserting a fork into the bread and it comes out clean.
While the bread is baking prepare the glaze. When baking is about done brush glaze on tops of the mini loaves and bake for two more minutes.
Remove bread from the oven and cool on a wire rack.
