Chilled Cucumber Soup

Ingredients

4 cups cucumber, peeled, seeded and chopped

2 cups water

2 cups plain yogurt

1 garlic clove, chopped

1 Tablespoon GOLDEN BLOSSOM HONEY

1 1/2 teaspoons salt

1/4 teaspoon dried dill

chopped scallions

No need to refrigerate it. It can be stored unopened, indefinitely, at room temperature in a dry cupboard.

Directions

Puree all ingredients, except scallions, in the blender. Garnish soup with chopped scallions. Serve very cold. Serves 4-6.
