Chilled Peach Soup

Serve this soup in small bowls as a cooling first course for summer meals or use as a luscious light dessert.

Ingredients

1 cup water

1/2 cup GOLDEN BLOSSOM HONEY

3/4 cup orange juice

6 cups fresh peaches, peeled and sliced

1/2 cup half and half

fresh mint leaves for garnish

Honey is one of the oldest foods in existence. It was found in the tomb of King Tut and was still edible since honey never spoils.

Directions

Place water, honey and orange juice into a large saucepan. Bring to a boil. Add peach slices. Return to a boil and cook until peach slices are tender. Remove from heat and cool.
Working in small batches, puree in blender until smooth. Transfer to bowl, stir in half and half. Chill until cold. May be prepared up to 2 days ahead.
To serve, spoon into bowls and garnish with a mint leaf.
