Chilled Summer Tomato Soup with Fresh Basil

Ingredients

1 large yellow onion, chopped

2 stalks celery, chopped

1 Tablespoon olive oil

6 large tomatoes, peeled and chopped

1 cup chicken broth

1 Tablespoon GOLDEN BLOSSOM HONEY

1/3 cup fresh basil, chopped

salt and pepper to taste

Honey is one of the oldest foods in existence. It was found in the tomb of King Tut and was still edible since honey never spoils.

Directions

Sauté onion and celery in olive oil in a large pot about 5 minutes, until onion is translucent. Add remaining ingredients except basil. Bring to a boil. Reduce heat. Simmer for 30 minutes. Remove from heat. Pulse in food processor until smooth. Pour into a bowl and add chopped basil. Cover and chill. When ready to serve, spoon into bowls and garnish with a basil leaf. Serves 4.
