Cranberry Biscotti

Made with honey, these cookies are softer than the traditional biscotti.

Ingredients

1/2 cup butter

3/4 cup GOLDEN BLOSSOM HONEY

2 eggs

1 teaspoon vanilla

3 1/2 cups flour

2 teaspoons cinnamon

1/2 teaspoon salt

1/2 teaspoon baking powder

1/4 teaspoon baking soda

1 cup dried, sweetened cranberries

Honey is one of the oldest foods in existence. It was found in the tomb of King Tut and was still edible since honey never spoils.

Directions

Preheat oven to 375°.
With electric mixer cream butter. Add next three ingredients. In another bowl mix next five ingredients. Add dry ingredients to batter while stirring. When mixed, stir in cranberries.
Shape dough on a greased baking sheet in two logs, approximately 1 inch thick and 3 inches wide. Bake for 20 minutes or until lightly brown. Cool for 5 minutes. Reduce oven to 300°. Slice logs into 1/2 inch strips. Return to cookie sheet and bake for another 20 minutes or until crisp.
Yield: 1 1/2 dozen.
