Curried Broccoli Soup

Ingredients

1 large head of broccoli, chopped

2 cloves garlic, chopped

2 medium onions,chopped

5 cups chicken or vegetable broth

1 Tablespoon GOLDEN BLOSSOM HONEY

1 teaspoon curry powder

1/4 teaspoon grated orange zest

8 ounces plain nonfat yogurt

No need to refrigerate it. It can be stored unopened, indefinitely, at room temperature in a dry cupboard.

Directions

Put first 5 ingredients in a large pot. Simmer for 30 minutes. Add curry and orange zest and simmer an additional 5 minutes. Transfer to blender or processor and puree, adding plain nonfat yogurt. Serves 4-6.
