Grilled Shrimp on Wilted Greens

We don't often think to barbecue shrimp, but this recipe is outstanding.

Ingredients

3/4 cup oriental sesame oil

1/4 cup GOLDEN BLOSSOM HONEY

Juice of one lime

1/4 teaspoon dried ginger

1 clove garlic, minced

1/2 teaspoon salt

1 small jalapeno pepper, minced

16 uncooked large shrimp, peeled and deveined

1 head radicchio, leaves seperated

1 pound baby spinach leaves, washed and stemmed

Directions

Serves: 4Mix together first 7 ingredients. Add shrimp and marinate for 1 hour.Remove shrimp from marinade. Heat 1/4 cup of marinade in a large skillet. Add radicchio and spinach and cook quickly until greens are just wilted. Arrange on four plates. Set aside.Place shrimp on the grill, being careful of flare ups when first placing them over the coals. Cook 2 minutes per side, or until just cooked through. Do not over cook. Place the shrimp on the wilted greens and serve.
