Ingredients
9 inch pie crust (baked according to package directions)
8 fresh kiwis, peeled and sliced
2 cups fresh strawberries, sliced
1/2 cup GOLDEN BLOSSOM HONEY
2 Tablespoons cornstarch
1/4 cup water
1 Tablespoon butter
1 teaspoon lemon juice
1/2 cup fresh blueberries
1/2 cup fresh raspberries
Honey Tips
Honey Bees Need Water
To keep their hives strong, beekeepers must place them in locations that will provide abundant nectar sources as well as water.
Directions
In a medium pot, place 5 of the sliced kiwis and 1/2 cup strawberries and cook over a medium-low heat. Add honey and cornstarch; mash together with a potato masher or fork. Add water, increase heat and stir until boiling. Reduce heat and stir for 1 to 2 minutes. Add butter and lemon juice and continue stirring for one minute. Transfer to a bowl and let cool.
Arrange one layer of strawberry slices across bottom of baked pie crust. Spoon kiwi mixture over strawberries. Arrange remaining kiwi slices around perimeter of pie, followed by strawberry slices, blueberries and raspberries, working toward the center until top is fully covered. Chill. Serve with whipped cream if desired.
Serves: 6-8
