Ingredients
1 cup fresh plum tomatoes, chopped
1/2 cup fresh tomatillos, husks removed, rinsed and cut into fine dice
1 large clove garlic, chopped
1/4 cup scallions, chopped
1/4 cup white wine vinegar
1 tablespoon olive oil
2 tablespoons GOLDEN BLOSSOM HONEY
salt and pepper to taste
4 (6-ounce) portions mahi-mahi fillets

Honey Is Sweeter Than Sugar
Due to the high level of fructose, honey is 25% sweeter than table sugar.
Directions
In a small bowl combine tomatoes, tomatillos, garlic and scallions.
In another bowl whisk together vinegar, olive oil and honey. Pour over tomato mixture. Add salt and pepper to taste. Set aside.
Brush fish with a small amount of olive oil. Season with salt and pepper. Broil 5 minutes. Turn fillets and broil another 5 minutes or until fish is just cooked through.
