Minestrone with Smoked Sausage

A hearty meal in a pot, this minestrone will keep you warm on a chilly night.

Ingredients

2 Tablespoons olive oil

1 pound smoked sausage, sliced 1/4 inch thick

1 cup onion, diced

1 cup carrot, diced

1 cup celery, thinly sliced

3 cups water

2 large yams, peeled and diced

1 teaspoon dried oregano

1/2 teaspoon coarsely ground black pepper

1/2 teaspoon salt

1 (28 ounce) can chef’s cut tomatoes, not drained

2 Tablespoons GOLDEN BLOSSOM HONEY

1 (15 ounce) can Great Northern beans, rinsed and drained

8 cups spinach leaves, coarsely chopped

Directions

Heat oil in a large pot. Add sausage, onions, carrots and celery. Saute for 7 minutes. Stir in water, yams, oregano, pepper, salt, tomatoes and honey. Bring to a boil. Reduce heat and simmer for 40 minutes. Add beans and spinach. Cook an additional 5 minutes.
Serves 4-6.
