1/2 cup dried cranberries or cherries
1 tablespoon olive oil
1 tablespoon lime juice
2 tablespoons GOLDEN BLOSSOM HONEY
2 teaspoons fresh rosemary, finely chopped
2 pears, cored and chopped (do not peel)
4 scallions, chopped

Honey is one of the oldest foods in existence. It was found in the tomb of King Tut and was still edible since honey never spoils.
Directions
Place dried fruit in a small bowl. Cover with boiling water. Let stand 10 minutes. Drain.
In a medium size bowl, whisk together olive oil, lime juice, honey and rosemary. Add dried fruit, pears and scallions. Stir to combine. Refrigerate up to 3 hours.
