Stuffed Shells with Spinach

A wonderful dish when you are having a crowd. Prepare ahead, refrigerate and just pop in the oven.

Ingredients

1 (12 ounce) package large pasta shells

2 eggs

1 onion, chopped

2 cloves garlic, minced

1 tablespoon GOLDEN BLOSSOM HONEY

1/2 teaspoon dried oregano

1/2 teaspoon dried basil

1 (15 ounce) container ricotta cheese

1/2 cup cottage cheese

1 (10 ounce) package frozen chopped spinach, thawed

1 (14 ounce) jar marinara sauce

12 ounces mozzarella cheese, grated

Due to the high level of fructose, honey is 25% sweeter than table sugar.

Directions

Preheat oven to 350°Cook shells according to package directions. Drain and immediately rinse with cold water. Set aside.Beat eggs in large bowl. Add onion, garlic, honey, oregano, basil, ricotta cheese, cottage cheese and spinach. Mix well.In a 9x13x2 inch baking dish, spread a layer of marinara sauce. Using a tablespoon, carefully stuff each shell with spinach-cheese mixture and place in a baking dish. Pour remainder of marinara sauce over shells. Top with mozzarella cheese.Bake uncovered for 35 minutes. Let stand 5 minutes before serving.Serves: 6-8
