Scottish Bread

Our Scottish Bread is slightly sweet, so we suggest serving it at breakfast or with your favorite afternoon tea.

Ingredients

4 cups flour

1/4 cup sugar

1 teaspoon baking soda

1/2 teaspoon ground ginger

1/4 teaspoon salt

1/4 cup unsalted butter, chilled and cut into small pieces

1 1/3 cups buttermilk

2 Tablespoons GOLDEN BLOSSOM HONEY

How Honey Is Created

Honey is created when bees mix plant nectar, a sweet substance secreted by flowers, with their own bee enzymes.

Directions

Preheat oven to 425°. Flour a large, heavy baking sheet.
In a large bowl combine first five ingredients. Add butter and mix with fork until a fine meal is formed. In a separate bowl, whisk together 1 cup of the buttermilk and the honey until blended. Mix buttermilk into dry mixture. Gradually add remaining buttermilk until a soft dough is formed.
Knead dough on a lightly floured surface until it holds together. Shape dough into an 8-inch round, about 1 1/2 inches high. Cut into 4 wedges. Place on floured baking sheet and bake about 30 minutes or until golden brown.
Yields: 4 small loaves
