Zucchini Nut Bread

Studded with walnuts or pecans, the perfect way to show off your baking skills. You can even use it for French Toast!

Ingredients

1 1/2 cups flour

1/2 teaspoon baking powder

1/2 teaspoon baking soda

1/4 teaspoon salt

1/2 Tablespoon ground cinnamon

1/2 cup coarsely ground nuts (walnuts or pecans)

1 large zucchini (enough for 2 cups, shredded)

1 egg, beaten

3/4 cup GOLDEN BLOSSOM HONEY

1/2 cup vegetable oil

1 teaspoon vanilla

Honey is one of the oldest foods in existence. It was found in the tomb of King Tut and was still edible since honey never spoils.

Directions

Combine first 5 ingredients. Stir in nuts. Mix zucchini with remaining ingredients, add to the flour mixture, stirring only until dry ingredients are moistened. Spoon the batter into a greased and floured 9 x 5 x 3 inch loaf pan. Bake at 350° for 1 hour, or until bread tests done. Cool 10 minutes. Remove from pan and finish cooling.
