Chocolate Cherry Bread

Delicious sweet bread. The addition of buttermilk imparts a light texture while the dried cherries add a concentrated burst of flavor.

Ingredients

1 3/4 cups flour

1/2 cup unsweetened cocoa powder

1 teaspoon baking soda

1/2 teaspoon salt

1/2 cup dried cherries

1 tablespoon strongly brewed coffee

3/4 cup buttermilk

1/3 cup GOLDEN BLOSSOM HONEY

2/3 cup sugar

2 tablespoons vegetable oil

1 egg

2 teaspoons vailla extract

Honey is one of the oldest foods in existence. It was found in the tomb of King Tut and was still edible since honey never spoils.

Directions

Preheat oven to 350&deg. Spray an 8 x 4-inch loaf pan with non-stick spray or lightly grease pan.
In a large bowl whisk together flour, cocoa powder, baking soda and salt. Stir in cherries.
In another bowl whisk together all remaining ingredients. Add to flour mixture and stir until just combined. Pour batter into prepared pan. Bake 45-50 minutes or until bread tests done. Cool in the pan on a rack for 10 minutes. Remove bread from pan and cool completely before slicing. To store wrap bread in foil or plastic wrap.
Serves: 8-10
