Golden Blossom Honey Cake

Ingredients

1 cup GOLDEN BLOSSOM HONEY

1 cup sugar

2 eggs

1/2 cup vegetable oil

1 Tablespoon lemon juice

1/2 cup cold coffee

2 teaspoons baking powder

1 teaspoon baking soda

1/2 teaspoon ginger

1/2 teaspoon allspice

3 cups flour

3/4 cup sliced almonds (optional)

1/2 cup raisins

No need to refrigerate it. It can be stored unopened, indefinitely, at room temperature in a dry cupboard.

Directions

Preheat oven to 350°. Grease 9-inch springform pan. With mixer on low, combine ingredients in order listed, reserving 1/4 cup almonds. Pour batter into pan, sprinkling reserved almonds on cake. Bake 1-1 1/4 hours or until cake tester comes out clean.
