Apricot Ginger & Honey Spread

Top your toast or muffin with this delightful spread. A good holiday gift idea. Can be stored in the refrigerator for 2 weeks.

Ingredients

1 pound dried apricots

zest of 1 lemon

1/4 cup fresh lemon juice

2 cups water

2 Tablespoons GOLDEN BLOSSOM HONEY

1 1/2 teaspoons ground ginger

No need to refrigerate it. It can be stored unopened, indefinitely, at room temperature in a dry cupboard.

Directions

In a heavy saucepan combine first 4 ingredients. Bring to a boil. Reduce heat to low and simmer, uncovered, 15 minutes, stirring occasionally until apricots have softened. Stir in honey and ginger.
Pour into a food processor and pulse until smooth.
Return to saucepan. Simmer, stirring often, about 1 hour, or until very thick. Cool. Pour into glass jars and refrigerate.
Yields: 2 1/2 cups
