Potato Broccoli Soup

A wonderful fresh tasting soup, using only a few ingredients, can be ready in no time.

Ingredients

2 pounds potatoes, washed and cut into 1 inch chunks

3 cloves garlic, minced

7 cups water

1 pound broccoli

1 tablespoon GOLDEN BLOSSOM HONEY

1/2 loaf French bread cut into 1/2 inch thick slices

olive oil

1/4 cup Parmesan cheese

Honey Is Sweeter Than Sugar

Due to the high level of fructose, honey is 25% sweeter than table sugar.

Directions

In a large pot, boil potatoes and garlic in water about 10 minutes.
Remove course stems from broccoli, cut into flowerets. Peel and thinly slice remaining sterms. Add to potatoes and garlic along with the honey and cook about 5 minutes or until broccoli is just tender.
Brush bread with olive oil and sprinkle tops with half of the Parmesan. Toast in broiler until cheese turns golden brown.
Add remaining Parmesan to soup. Ladle into bowls, top with toasted French bread slices.
Serves: 3-4
